Oatmeal Scotchies


Oatmeal Scotchies...from the back of Nestle toll House Butterscotch Chips bag.

Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup (2 sticks) butter or margarine, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract or grated peel of 1 orange
  • 3 cups quick or old-fashioned oats
  • 1 2/3 cups (11-oz. pkg.) NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels

Directions

PREHEAT oven to 375° F.

COMBINE flour, baking soda, salt and cinnamon in small bowl. Beat butter, granulated sugar, brown sugar, eggs and vanilla extract in large mixer bowl. Gradually beat in flour mixture. Stir in oats and morsels. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE for 7 to 8 minutes for chewy cookies or 9 to 10 minutes for crisp cookies. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

PAN COOKIE VARIATION: 
Grease 15 x 10-inch jelly-roll pan. Prepare dough as above. Spread into prepared pan. Bake for 18 to 22 minutes or until light brown. Cool completely in pan on wire rack. Makes 4 dozen bars. 

Chewy Granola Bars and Applesauce Granola








My good friend Jeni shared this recipe with me and I am addicted!!  I made the Applesauce granola and then used the granola to make chewy granola bars!    SO GOOD!








Chewy Chocolate Chip Granola Bars
Ingredients
  • 1 stick butter
  • 4 tbsp. packed light brown sugar
  • 4 tbsp. honey
  • 4 cups plain granola
  • 2 cup rice cereal (Rice Krispies, etc.)
  • 1/4 to 1/2 cup semisweet chocolate chips (or dark or white or butterscotch or any combo)
Process
  1. Line 9×13 with foil or parchment.  Spray the foil. Set aside.
  2. Combine butter, honey and brown sugar in a large saucepan over medium heat. Stir until the butter is melted.
  3. Bring the mixture to a boil, then lower the heat to medium-low and simmer until the sugar is dissolved, about 2 minutes. Remove the saucepan from the heat.
  4. Add the granola and rice cereal into the saucepan and fold them into the sauce until evenly coated.
  5. Spread the mixture into the prepared pans and press firmly with a spatula to evenly fill. Sprinkle the chocolate and chips onto the top of the granola and gently press them down with the spatula.
  6. Let sit at room temperature for 15-20 minutes or until mostly cooled and set; lift out of the pan and cut into bars.
I liked to chop my chips or use mini ones.

Applesauce Granola
Ingredients
  • 2 1/2 cups old fashioned oats
  • 1 cup nuts (pecans, walnuts, almonds)
  • 1/2 cup sunflower seeds
  • 1/4 cup sesame seeds
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • 1/3 cup raisins
Instructions - Preheat oven to 300F.
  1. In a large bowl, mix together oats, nuts, sunflower seeds, sesame seeds, brown sugar, cinnamon, and salt. Set aside.
  2. In a small saucepan, warm the applesauce with the honey and oil over low heat.
  3. Mix the applesauce mixture into the oat mixture and stir to coat everything. Spread the mixture onto a 9 x 13 baking pan.
  4. Bake for 45 to 50 minutes, stirring every 10 minutes, until the granola is a deep brown. Remove from oven and stir in raisins. Cool completely before enjoying.
option - I decided to use 3 cups of oats and no seeds. I also omitted the raisins. 

S'more Bars



Wow it has been way too long since I  posted a recipe... I had to share this yummy dessert I found on pinterest!  My kids loved it!!  

S'more Bars 
1/2 cup butter, room temperature
1/4 cup brown sugar
1/2 cup sugar
1 large egg
1 tsp vanilla extract
1 1/3 cups all purpose flour
3/4 cup graham cracker crumbs
1 tsp baking powder
1/4 tsp salt
2 king-sized milk chocolate bars (e.g. Hershey’s)
1 1/2 cups marshmallow creme/fluff (not melted marshmallows)
Preheat oven to 350°F. Grease an 8-inch square baking pan.
In a large bowl, cream together butter and sugar until light. Beat in egg and vanilla. In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined.
Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. 2 king-sized Hershey’s bars should fit perfectly side by side, but break the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick. Spread chocolate with marshmallow creme or fluff. Place remaining dough in a single layer on top of the fluff (most easily achieved by flattening the dough into small shingles and laying them together).
Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars.
